Spicy Almond Butter Noodles

This recipe is super easy to make, vegan, and protein rich. Feel free to customise it by adding veggies or meat.



Ingredients

To create your Spicy Almond Butter Noodles, gather the following ingredients:


  • 200g rice noodles

  • 3 tablespoons almond butter

  • 1-2 Birds Eye chilis (adjust according to your spice preference)

  • 2 tablespoons soy sauce

  • 1 tablespoon lime juice

  • 1 tablespoon honey or maple syrup

  • 1 garlic clove, minced

  • Chopped peanuts

  • Chilli Flakes



Instructions

Bring a pot of water to a boil and add the rice noodles. Cook according to the package instructions, usually about 4-6 minutes. Once cooked, drain the water.


In a mixing bowl, whisk together the almond butter, soy sauce, lime juice, honey (or maple syrup), and minced garlic smooth. If you prefer a thinner sauce, feel free to add a splash of warm water. Heat up the sesame oil and pour over the almond sauce for a satisfying sizzle.


Add the cooked rice noodles to the almond butter sauce and ensure the noodles are well coated. Finely chop the Birds Eye chilis and add to the noodles with roasted peanuts and chilli flakes.
