Roasted Cauliflower Soup

If you are searching for a soul-warming dish that is both healthy and satisfying, look no further than roasted cauliflower soup. This creamy delight highlights the natural sweetness of cauliflower, enhanced by the roasting process that brings out deep flavors. Ingredients
1 large head of cauliflower, cut into florets
2 tablespoons of olive oil
1 onion, diced
3 cloves of garlic, minced
4 cups of vegetable broth
1 cup of coconut milk (or dairy milk if preferred)
Salt and pepper to taste
Optional toppings: croutons, fresh herbs, or a drizzle of olive oil
Start by preheating your oven to 425°F (220°C). Spread the cauliflower florets on a baking sheet and drizzle them with olive oil. Toss until they are well-coated and arrange them in a single layer. Roast the cauliflower for 25 to 30 minutes, or until the edges are golden brown and the florets are tender.
While the cauliflower is roasting, heat a tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent. Afterward, add the minced garlic and cook for another minute, being careful not to let the garlic burn.
Once the cauliflower is roasted, transfer it to the pot with the onions and garlic. Pour in the vegetable broth to combine all the elements. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
Using an immersion blender, blend the soup until it reaches your desired consistency. For an extra creamy texture, mix in the coconut milk (or dairy milk) at this stage and blend once more. Finally, season with salt and pepper to your liking.
For a bit of added crunch and flavor, try roasting a few extra cauliflower florets and using them as a garnish on top of your soup and add herbs like cilantro.
