Perfectly Shiny Crinkle Top Brownies

Creating that perfect crinkle top combines art and science. The shiny surface results from a reaction between cocoa powder and sugar. When baked, sugar caramelizes, giving the brownies their glossy finish. This process contributes to both the texture and taste, making every bite an indulgence. In fact, the more sugar you use, the shinier the top can become. And, using chocolate chunks also gives it the crackly top, although I don't know the science behind that.

Ingredients
1 cup (2 sticks) unsalted butter
2 cups granulated sugar
1 teaspoon vanilla extract
4 large eggs
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chunks
INSTRUCTIONs
Begin by preheating your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by lining it with parchment paper.
In a medium saucepan, melt the butter over low heat. After it melts, remove it from the heat. Stir in the granulated sugar and vanilla extract until blended smoothly.
Let the butter mixture cool slightly. Then, add the eggs one at a time, mixing thoroughly after each addition.
In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined. Fold in the chocolate chunks.
Pour the brownie batter into your prepared pan and spread it evenly. Bake for 25 to 30 minutes. Check for doneness by inserting a toothpick in the center. It should come out with a few moist crumbs attached.
Allow the brownies to cool in the pan for at least 20 minutes. Use the parchment overhang to lift them out and let them cool completely on a wire rack before cutting into squares. You’ll want to cut them using a sharp knife for clean edges.
Tips for Perfect Brownies
Don’t Overbake: Aim for slightly underbaked brownies for that perfect fudgy texture. They will firm up as they cool. A good indicator? Remove them when the toothpick has just a few moist crumbs.
Let Them Rest: For the best flavor and texture, let your brownies sit for a few hours, or even overnight, before cutting. This will create that coveted chewy mouthfeel and enrich the taste.
Get Creative: Consider adding toppings such as chopped nuts (walnuts or pecans work well), a sprinkle of sea salt, or a drizzle of melted chocolate for a gourmet finish.
