Insalada de Burrata

I could feast over a creamy ball of burrata just by itself, but this salad and its dressing makes it even better. With sweet notes of cranberries and balsamic and the crunchiness of walnuts, this comes together in 10 minutes.




Ingredients

  • 1 ball of burrata cheese

  • 4 cups fresh arugula leaves

  • 1/4 cup dried cranberries

  • 1 skinned oranges, segmented

  • 1/4 cup walnuts, roughly chopped

  • Salt and pepper to taste


  • 3 tablespoons olive oil

  • 1 tablespoon honey

  • 1 tablespoon lemon juice

  • Salt and pepper to taste


INSTRUCTIONS


In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper until well combined.


In a large serving bowl, place the fresh arugula leaves as your base. Scatter the dried cranberries and segmented oranges over the salad. Top with walnuts. Toss the salad with the dressing and plate it. Finally, place the ball of burrata at the centre.


Season with salt and pepper, and finish with a drizzle of sweet balsamic glaze.
