Hearty Congee Recipe

A staple comfort food in many Asian countries, the perfect pick-me-up.

  • 1 cup sushi rice

  • 8 cups water or broth

  • 3–4 scallions (green onions)

  • Salt, to taste

  • Optional toppings: Soy sauce, sesame oil, shredded chicken, or pickled vegetables



INSTRUCTIONS

Begin by rinsing the sushi rice under cold water until it runs clear. In a large pot, combine the rinsed sushi rice and water or broth. Bring it to a boil, then reduce the heat to low. Let it simmer for 30-40 minutes, stirring occasionally. You're aiming for a smooth, porridge-like consistency.



While the rice cooks, chop the scallions finely. After about 30 minutes, stir in the white parts of the scallions along with a pinch of salt. Allow it to simmer for an additional 10 minutes.


Once your congee reaches the desired thickness, ladle it into bowls and sprinkle with the chopped green scallion tops. Elevate the dish further with a drizzle of soy sauce or sesame oil, enhancing both taste and presentation.


TIPS

Top with chilli oil for a fiery kick!
