Easy Banoffee Pie

Banoffee pie is British dessert which comes together so easily and is a family favourite. The balance of the different layers is what's special about this dish. Everyone has a favourite layer and for me its the bananas. They provide natural sweetness and a refreshing taste when the buttery crust and caramel get overwhelming. Anyway, this recipe is very easy to make so you must try it out!

ingredients
For the Base:
- 200g digestive biscuits
- 100g unsalted butter, melted
For the Filling:
- 1 can (385g) sweetened condensed milk
- 2 ripe bananas
- 300ml heavy whipping cream
- 1 tablespoon powdered sugar
- Chocolate shavings (for garnish)
Making the Dulce de Leche
Remove the label from the can of sweetened condensed milk.
Place the can in a large pot, ensuring it is fully submerged in water. Remember to check the water level periodically during cooking.
Bring the water to a gentle simmer and let the can cook for 2-3 hours. This slow cooking process caramelizes the milk, resulting in a creamy dulce de leche.
Once finished, carefully remove the can and let it cool completely before opening.
Assembling the Banoffee Pie
With your dulce de leche ready, it’s time to put together the pie:
Prepare the Base:
Crush the digestive biscuits in a food processor or by hand until they resemble fine crumbs. Combine the crumbs with the melted butter and mix well. Press this mixture into the bottom of a 9-inch pie dish, ensuring an even layer. Refrigerate for 15 minutes to let the crust set.
Add the Dulce de Leche:
Once the crust is firm, spread a generous layer of your homemade dulce de leche over the biscuit base.
Layer the Bananas:
Slice the ripe bananas and layer them evenly over the dulce de leche.
Whip the Cream:
In a bowl, whip the heavy cream with powdered sugar until soft peaks form. Spread this whipped cream over the banana layer, ensuring it covers thoroughly.
Garnish:
Finish your banoffee pie with chocolate shavings or finely grated chocolate for an extra touch of indulgence.
Chilling the Pie
For optimal results, refrigerate your completed pie for at least one hour before serving. This cooling period allows the flavors to meld together beautifully and makes slicing the pie much easier.
