Crispy Garlic Shrimp

I tend to double the amount of garlic in a recipe but this one is exclusively for garlic lovers with 20 whole cloves! A dream.

Ingredients
1 pound of large shrimp, peeled and deveined
½ cup of extra virgin olive oil
20 cloves of garlic, chopped
½ teaspoon of red pepper flakes (optional for some heat)
Salt and pepper, to taste
Fresh parsley, chopped for garnish
Lemon wedges, for serving
Instructions
Rinse the shrimp under cold water. Pat them dry with paper towels and season with salt and pepper. In a large skillet, heat the olive oil over medium heat. When the oil is hot, add a tablespoon of the garlic to the skillet. Cook for about 1-2 minutes until the garlic is golden brown and fragrant.
Add the seasoned shrimp to the skillet. Cook the shrimp for approximately 2-3 minutes on each side, or until they turn pink and opaque.
Transfer the shrimp and crispy garlic onto a serving platter. Add the remaining garlic into the skiller and cook until crispy and golden-brown. Transfer onto the shrimp and garnish with fresh parsley. Serve with lemon wedges and pair with bread.
