Bean to Bar Chocolate

Real chocolate is made from cacao nibs and cacao butter. I had been wanting to try it ever since I watched Johnny Depp's Chocolat. It tasted more sour and earthy than store bought chocolate however carried a richer taste. This recipe makes a 70% dark chocolate since it uses 70 grams of cacao product, however you can change the ratio depending on your taste.



Ingredients

  • 60 grams Cacao Nibs

  • 30 grams sweetener (jaggery/sugar/honey/maple)

  • 10 grams Cacao Butter




INSTRUCTIONS

Blend the Cacao Nibs with melted Cacao Butter in a high-powered blender until it turns into a smooth paste. This can take a while. Add in the sweetener and continue blending until incorporated.


Set in a chocolate mould and refrigerate for 3+ hours. If you wish to add any toppings like hazelnuts or coconut, you may do so before refrigerating the chocolate.


TIPS!
  • Blend in intervals so your blender doesn't overheat and crash

  • You can substitute the cacao butter with coconut oil

  • You can use any other mould to refrigerate the chocolate; however, the time it takes to set may increase with a thicker mould
