Bean to Bar Chocolate

Real chocolate is made from cacao nibs and cacao butter. I had been wanting to try it ever since I watched Johnny Depp's Chocolat. It tasted more sour and earthy than store bought chocolate however carried a richer taste. This recipe makes a 70% dark chocolate since it uses 70 grams of cacao product, however you can change the ratio depending on your taste.
Ingredients
60 grams Cacao Nibs
30 grams sweetener (jaggery/sugar/honey/maple)
10 grams Cacao Butter
INSTRUCTIONS
Blend the Cacao Nibs with melted Cacao Butter in a high-powered blender until it turns into a smooth paste. This can take a while. Add in the sweetener and continue blending until incorporated.
Set in a chocolate mould and refrigerate for 3+ hours. If you wish to add any toppings like hazelnuts or coconut, you may do so before refrigerating the chocolate.
TIPS!
Blend in intervals so your blender doesn't overheat and crash
You can substitute the cacao butter with coconut oil
You can use any other mould to refrigerate the chocolate; however, the time it takes to set may increase with a thicker mould
