Balsamico Glazed Pumpkin and Feta Salad

Fall calls for pumpkin but this recipe is for anytime! Refreshing and warm with a nutty flavour from pine nuts. This recipe doesn't only nourish your tastebuds but also your soul.

Ingredients

  • 1 medium pumpkin, peeled and cubed (about 4 cups)

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1/4 cup balsamic glaze

  • 100grams feta cheese cubes

  • 1/4 cup toasted pine nuts

Begin by preheating your oven to 400°F (200°C).


Peel and cube the pumpkin. In a mixing bowl, toss the pumpkin cubes with olive oil, salt, and pepper. Spread the cubes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the pumpkin is fork-tender and has developed a golden-brown color. Toss the cubes halfway through cooking for even roasting.


After roasting, take the pumpkin out of the oven and let it cool slightly. Drizzle the balsamic glaze over the cubes.


Transfer the roasted pumpkin to a serving bowl. Top the feta cheese and add about 1/4 cup of toasted pine nuts.
